Nicaragua, Central America
The small Central American country of Nicaragua is still perhaps best known for the terrible civil war of the 1980s between the Sandinista government and the US-backed Contras. Now, however, it is a more stable democracy and welcomes visitors. Among its main attractions are the 19 active volcanoes that are managed as national parks, providing opportunities for some exciting hiking trips.
There's a good story by Gregory Dicum, published by the New York Times on 17 December 2006 which provides much more background on the country, with a taste of what it's like to hike up the slopes of some of the volcanoes. It's well worth a read.
